The Spirit That Meets Your Standards

Our meticulous process is never rushed and always thoughtful. We know the extra time, care and craftsmanship will reveal itself sip after silky sip. Agave, water and yeast are all that are needed to craft our impeccable tequilas—no added sweeteners, glycerin or coloring (yuck!) required.

Harvesting

Our master distiller, Ana Maria Romero Mena selects only the finest Blue Weber Agave, choosing plants at peak maturity with just the right sugar content. Everything comes back to great agave.

Cooking

The heart of the agave, or piña, is cooked in stainless steel autoclaves, gently bringing out its fermentable sugars.

Milling

Once cooked, we patiently allow the piñas to cool before milling. We use a roller mill to crush and shred them, releasing the rich, sweet juice inside—known as mosto—which will soon transform into tequila.

Fermentation

This step is integral to developing our signature fruit-forward taste profile. The mosto is fermented in large tanks with our proprietary yeast. Our master distiller must meticulously monitor this step, as it varies based on the season and current climate.

Distillation

Twice distilled in stainless steel alembic stills with copper coils, the tequila is refined to perfection. We cut the head and tails and keep only the best part of the juice. We take our time by allowing our juice to stabilize in tanks for a minimum of 30 days, allowing the flavors to harmonize.

Resting/Aging

Most blanco tequilas go straight from distillation to bottling. We take the extra step and rest our Luna Blanco in American oak bourbon barrels for a short time to develop sweeter tasting notes of vanilla and caramel, creating an exceptionally silky-smooth blanco tequila.

Our Rosa Reposado is uniquely aged in barrels formerly used to create rosé wine. We source the finest rosé wine barrels from the South of France to impart a gorgeous rose-gold hue and a light floral and berry profile.

No additives—just pure crafts(wo)manship.
