1 ¼ oz. Inspiro Tequila
½ oz. Pomp and Whimsy Gin Liqueur
½ oz. lime juice
½ oz. jalapeño celery syrup *
¼ cup soda water
- Combine ingredients, add ice, and shake vigorously.
- Strain into a Collins glass filled with soda water.
- Add fresh ice and garnish with celery sprig.
- * Jalapeño celery syrup: stalk of celery, sugar cube, 1 oz. hot water, ½ jalapeño. Muddle (use force) celery stalk, sugar cube and jalapeño pepper into a bowl or cup. Add the hot water, mix and strain.
